Mushrooms

Not only are mushrooms great to throw into a recipe but they are good for you and good for the environment.

There are 14,000 varieties of mushrooms of that 3,000 are edible.
Excellent source of potassium, riboflavin, niacin, and selenium.

Did you know they can clean up oil spills too?
They can! How cool is that?

They can break down toxic chemicals found in oil and consume radiation from nuclear spills.  Why aren't we using this amazing little fungi?  I have not found a count and dry answer for that except just like oil is a fossil idea so is the current methods of clean up of its spills.  Oil companies think they can control an oil disaster but clearly they haven't yet.  Don't fret though the EPA has finally recognized the research and proven methods from a little known researcher in Olympia Washington.  We can only hope they will use his research and methods to help clean up environmental toxins that are laying waste in our lands and eco-systems.

Cool fun facts!
